“Can’t beet it!” smoothie recipe
If you can’t get your toddler to eat veggies - have them drink veggies! This beet smoothie is a unique, refreshingly healthy, and easy recipe to make. It works as a great afternoon pick-me-up, especially during hot summer days. Although strange at first, beets, combined with the right fruits and vegetables, create a wonderful earthiness that is not overpowering. With plenty of natural sugars and powerful disease-fighting antioxidants, they make a vivid smoothie that’s gorgeous.
Servings: 2
Ingredients:
- 1/4 cup grated raw beet (increase to 1/2 cup if you want a stronger flavor)
- 3/4 cup carrot juice
- 3/4 cup apple juice
- 1 1/2 cups frozen diced papaya
- 2 teaspoons fresh lime juice
- 1/4 teaspoon grated fresh ginger
- 1 tablespoon honey (exclude for babies under 1 year)
Preparation:
- Combine the beets, carrot juice, and apple juice in a blender.
- Add all the remaining ingredients and blend until smooth.
- Serve immediately.
